Menno is on the hunt for honesty and you’ll fully understand if you look at his methods of practice. Each and every ingredient gets the attention it deserves, and he keeps it close to home. Fish is mainly sourced from the North Sea and meat is preferably from Dutch soil. Where possible Menno works with organically grown produce that he can lay his hands on and the use of plastic is to be avoided and kept to an absolute minimum.
During your stay, we serve and refresh you continuously with purified and mineralized tap water from Haarlem in reusable water bottles. The result speaks for itself: Michelin crowned Olivijn with a star. Menno’s flavors are refined and have a taste for elegance, beautifully combined for you to enjoy. Like a charm!
